Native to the arid and semi-arid regions of Mexico, the agave plant takes years to mature, typically between 8 to 12 years, before it can be harvested for mezcal production. After cooking, the piñas are crushed, traditionally using a tahona—a large stone wheel pulled by animals—to extract the juice, which is then fermented and distilled.
